No. Google says each page in a paginated sequence should have its own URL and its own canonical. Pointing them all at page 1 can hide products deeper in the list.
Give each page a unique URL, such as ?page=2, and do not use the first page as the canonical for the others. Google also ignores URL fragments, so page numbers after a # are not seen.
Check the canonical tag on page 2 of a large collection. If it points to page 1, change the theme so each page names itself. Link pages with normal anchor links.
